Duties: Stock Management & Control: Take full responsibility for all stock across departments (camp kitchen, bar, water park, tuck shop and housekeeping)Ensure accurate receiving, issuing, transfers, and recording of stockMaintain real-time accurate stock recordsPrevent stock loss, theft, wastage, and misuseEnforce FIFO principles and correct storage procedures Stock Counts, Reconciliations & Variance Control: Conduct daily, weekly, and monthly stock countsReconcile physical stock with system stockInvestigate, explain, and report all variancesEnsure zero tolerance for unexplained discrepancies Systems & Software (HOPS, Lightspeed, POS): Maintain accurate stock records on HOPS, Lightspeed, and POS systemsAssist Head Chef with ensuring correct recipe linking, portion control, and automatic deductionsMonitor sales vs stock usage for irregularitiesGenerate stock, variance, usage, and valuation reports Purchasing & Supplier Coordination: Monitor minimum and maximum stock levelsSupport procurement planning and orderingVerify deliveries, invoices, and supplier pricingReport supplier discrepancies Cost Control & Waste Reduction: Monitor food, beverage, and consumable costsTrack wastage, breakages, expired stock, and over-portioningSupport initiatives to reduce waste and protect profit margins Compliance & Stock Policing: Enforce stock policies and internal controlsPrevent unauthorized access to stockReport misuse, negligence, or suspicious activitySupport audits and disciplinary processes Reporting & Administration: Prepare daily, weekly, and monthly stock reportsMaintain accurate documentation including GRVs, invoices, transfer notes, and count sheetsEnsure audit-ready stock recordsRequirements: At least 3+ years proven experience as a Stock Controller in hospitality, restaurant, or resort environmentsStrong experience using HOPS, Lightspeed, POS, or similar stock/inventory platformsExcellent numerical skills and attention to detailStrong Excel and reporting skillsFirm, assertive personality with the ability to enforce controlsHigh integrity, reliability, and accountabilityAbility to work under pressure and meet deadlines
