Based in the Hluhluwe area, this role is suited to a hands-on individual with a strong background in high-end hospitality, who is able to deliver exceptional dining experiences while maintaining strict operational, hygiene, and cost controls in a remote lodge environment.Candidate Responsibilities:Oversee full kitchen operations, ensuring consistently high standards of food quality, hygiene, and presentationDevelop and implement creative 7-day menus in line with established food styling guidelinesTrain, mentor, and manage the kitchen team, maintaining strong leadership and disciplineEnsure all meals are fresh, well-presented, and aligned with luxury guest expectationsManage all food orders, stock control, stock rotation, and storerooms, including fridges and freezersMonitor and control food costs, ensuring menus are costed and within budget parametersOversee bush dining experiences, including banqueting, picnics, and game drive snacksMaintain kitchen hygiene standards, ensuring correct chemicals and cleaning materials are always in stockImplement and manage leftover control processesConduct regular checks on food quality across all service points and campsEnsure smooth food logistics and transport, maintaining cleanliness and accurate checklistsWork closely with lodge management, HODs, and suppliers to ensure seamless operationsMaintain accurate administration, reporting, and staff recordsEnsure compliance with health, safety, and lodge policiesCore Criteria:Proven experience as an Executive Chef or Senior Sous Chef within a luxury lodge or hospitality environmentStrong leadership and team management skillsExcellent knowledge of food preparation, presentation, and kitchen hygiene standardsStrong organisational and administrative abilitiesGood understanding of stock control, budgeting, and cost managementAbility to work independently in a remote environmentHigh attention to detail and commitment to service excellencePassion for creating innovative and high-quality cuisineValid South African drivers licenceThis is a live-in position.
