Responsibilities: - food cost and all responsibilities that accompany keeping within budget - hygiene practices - opening and closing the kitchen and all the controls and checks required - staff management: discipline, mentoring, rostering and wages - equipment maintenance - Admin related to the BOH - pass coordination
