Key ResponsibilitiesMeat Preparation & ProcessingDe-bone, cut and trim a variety of meats including beef, lamb and poultryPrepare meat into various cuts such as steaks, chops and roasts according to retail standardsEnsure minimal wastage and maximize yield during meat processingProduction & ManufacturingProduce value-added meat products such as sausages, boerewors and minceFollow standard recipes and production procedures for consistency and qualityAssist with stock preparation for daily retail displayHygiene & Food SafetyMaintain strict hygiene and sanitation standards in line with food safety regulationsEnsure all equipment, tools and workstations are cleaned and maintained properlyAdhere to cold chain management and proper storage procedures at all timesStock Control & DisplayAssist with stock rotation (FIFO) and inventory controlEnsure meat displays are well-presented, fresh and appealing to customersMonitor product quality and remove any expired or substandard items.Minimum RequirementsMatric (Grade 12)2 3 years experience as a Blockman within a retail butchery environmentStrong knowledge of meat cuts, processing techniques and portioningExperience in producing processed meat products (boerewors, sausages, mince).Key CompetenciesAttention to detail and precisionStrong hygiene and food safety awarenessAbility to work under pressure in a fast-paced retail environmentGood teamwork and communication skillsPhysically fit and able to handle manual work.
