• Full stock take procedures
• Check correct prices are captured in POS

• Receiving and checking Stock
• Bulk, portioning and fills
• Organising of fridge, freezer and storerooms in an organized and clear
• Variances clearly explained
• Detail cleaning as per roster
• Adhering to all Spur specifications regarding hygiene
• Staff hygiene
Maintenance of equipment
• Preventative maintenance of all equipment
• Ensure equipment is in good working order
Opening and Closing Procedures
• Guarantee BOH checks are carried out properly twice a day
• Correct procedures of opening and closing sections
BOH staff
• All discipline procedures carried out
BOH admin
• Prep sheet to be used as a working document throughout the day
• Vector and supplier orders done on time (to come)
• Meat log correctly administered
• Defrost cycle as per Spur Spec
• Daily prep check sheet completed twice a day
• BOH checks recorded twice a day
• Cleaning rosters done and carried out
Pass coordination
• Well presented: quantity, quality
• Going out on time
• Controls: no slip no food
General overview of FOH
