Key Responsibilities:
- Support the Chef de Partie in running the section during prep and service
- Prepare, cook, and plate dishes to high standards with accuracy
- Maintain consistent quality, portion control, and presentation
- Organise mise en place and ensure the section is service-ready
- Uphold food hygiene, safety protocols, and kitchen cleanliness
- Assist with stock rotation, labelling, and managing section organisation
- Communicate clearly and effectively with the brigade during service
- Step into Chef de Partie duties when required, showing confidence and reliability
Requirements:
- 2-3 years of proven experience in high-end or fine-dining kitchen environments
- Strong knife skills and solid culinary technique across multiple sections
- Ability to handle pressure, long hours, and fast-paced service environments
- Excellent teamwork, communication, and a proactive, positive attitude
- Resilience, discipline, and the ability to take and apply feedback
- Organised work habits with strong attention to detail
- Ability to mentor and support Commis Chefs on the section
- Must be legally eligible to work in South Africa
- Ideal candidates will be based in or around the Hillcrest area
CDP-Level Expectations & Progression:
- Confidence in independently managing mise en place for the section
- Strong understanding of timing, workflow, and dish structure
- Ability to maintain section standards without constant supervision
- Initiative in anticipating needs during service and supporting the brigade
- Strong communication under pressure to keep service smooth and coordinated
- Ability to step up and run the section when the CDP is absent
- Build consistency and speed in dish execution
- Learn ordering basics, portioning control, and waste management
- Develop plate leadership and the ability to coordinate small tasks for juniors
- Show readiness to transition into a full Chef de Partie role through reliability and professionalism
Advantageous Qualifications:
- Culinary diploma or formal culinary arts training
- Experience with African cuisine and traditional cooking techniques
- Previous section responsibility or supervisory experience
- Knowledge of modern culinary trends and presentation styles
